The Recipe: Strawberry Cupcakes

Did you know there was a Cupcake Day? We didn’t! To celebrate the whole 24 hours dedicated to the lovely, little cakes wrapped in paper we knew we had to find a worthy recipe. These strawberry cupcakes should do the job nicely… makes 18.

Strawberry Cupcakes - Recipes By Breeze House Owner's Club

Ingredients

250 g (9oz) unsalted butter, very soft

250 g (9oz) caster sugar

4 medium eggs

250 g (9oz) self-raising flour

1 tbsp. vanilla extract

For the filling

250 g (9oz) fresh strawberries (hulled weight), chopped

20 g cornflour

40 g (1 ½oz) caster sugar

100 ml (3 ½ fl oz) double cream

For the icing

3 medium egg whites

125 g (4oz) caster sugar

3 tbsp. liquid glucose

1/2 tsp vanilla extract

Method

  1. Preheat oven to 180°C (160°C fan) mark 4 and line 18 holes in two 12-hole muffin tins with paper cases
  2. In a large bowl, using a handheld electric whisk, beat the butter, sugar, eggs, flour and vanilla until smooth
  3. Divide among cases and bake for 20min until pale golden and springy to the touch
  4. Transfer cakes to a wire rack and allow to cool completely
  5. Meanwhile, whiz the strawberries in a food processor until smooth
  6. Put in a pan with cornflour, sugar and cream. Bring to boil over medium hob heat, whisking constantly – the mixture will be thick
  7. Scrape mixture into a piping bag fitted with a 1cm (1/2in) plain nozzle and set aside to cool completely
  8. When cakes and filling are cool, cut a rough 2cm (3/4in) wide/deep hole in top of each cake. Pipe in filling, squeezing in as much as possible without overflowing
  9. For the icing, put egg whites, sugar and glucose into a heatproof bowl set over a pan of simmering water
  10. Beat with a handheld electric whisk until very thick and glossy, about 5min
  11. Take the pan off the heat, add vanilla and beat until no longer warm, about 3min
  12. Scrape icing into a piping bag fitted with a 1cm (1/2in) star nozzle and pipe on to cakes
  13. Add decorations of your choice and enjoy!
