The Recipe: Dad’s Chocolate Chip Cookies

Dad’s deserve the best, don’t they?! For Father’s Day on 21st June, go all out with these nutty and decadent chocolate chip cookies… he’ll love you even more for it! This recipe makes a colossal 48 biscuits


225g butter

220g dark brown soft sugar

200g caster sugar

2 eggs

1 teaspoon vanilla extract

310g plain flour

1 teaspoon bicarbonate of soda

1 teaspoon baking powder

1/2 teaspoon salt

120g white chocolate chips

160g milk chocolate chips

120g dark chocolate chips

40g chopped walnuts

35g chopped pecans

30g chopped almonds


  1. Preheat the oven to 180 C / Gas 4.
  2. In a medium bowl, cream together the butter, brown sugar and caster sugar
  3. Mix in the eggs and vanilla
  4. Combine the flour, bicarbonate of soda, baking powder and salt; add to butter mixture and stir until just blended
  5. With a large wooden spoon, stir in all the chocolate chips
  6. Stir in the walnuts, pecans and almonds.
  7. Drop heaped teaspoonfuls of the mixture onto ungreased baking trays
  8. Bake for 10 to 12 minutes
  9. Allow cookies to cool on the baking tray placing on wire cooling rack
  10. Share with your Dad!
